I think our Fall weather may finally be here to stay. You know what that means? Pumpkin Spice everything everywhere you look. While in the past I’ve gone on a hunt for healthy pumpkin spice recipes to appease the masses, this year I’m on a mission to expand our fall tastes.
First up- these Butternut Squash Pecan Muffins. This was my first time making a baked good with squash (as opposed to a savory dish) and it did not disappoint. The pecan streusel topping is the perfect addition for a little extra sweetness and texture. I served mine warn with almond butter and they were delicious! So ditch the pumpkin spice for the weekend and make a batch of these guys to enjoy!
