If you are in a hurry, like I was, you can shorten the prep process by purchasing the pre-shopped peppers/onions and riced cauliflower that you can find in most produce sections. I’m typically against not doing the work myself, but my stomach was telling me that I needed breakfast in a hurry. I topped my dish with chopped green onions, cilantro, and a sriracha drizzle and it was nothing short of amazing!
